Hello again, and welcome back to my free inquiry project, where I try new recipes every week! This week was probably my favourite meal that I made, and it was also probably the healthiest! I made a Tofu Rice Bowl, and heres how I did it!
First, I started by prepping my rice and started it in the rice cooker. I put in 2 cups of sushi rice, and then added 2 1/2 cups of water to that, along with a splash of rice wine vinegar. I started the rice cooker and let that cook.

I then chopped up 1 head of broccoli and preheated a pan with butter. Once that was ready I put in my chopped broccoli and seasoned it with cajun, salt, and chilli flakes. I let that crisp up a little and placed that off to the side after about 7 minutes.

I then prepped my extra firm tofu by dicing it up into bite-size squares, then placing that into a bowl and seasoned them with Herbamare Organic salt. I shook those up and then preheated the same pan with some extra-virgin olive oil, and placed my tofu in the pan. I let that crisp up for about 10 minutes or until brown on all sides.

Then it was time to assemble! I put some of my sushi rice in a bowl and covered half the rice with the tofu and the other half with the broccoli. I garnished it with some more Herbamare Organic salt and some Furikake rice seasoning. This was seriously so delicious and I plan on making it again very soon!
